Ingredients

Masa Harina (Corn Flour)

Water

Salt

Melty Cheese (Such As Mozzarella Or A Cheese Blend)

Refried Beans

Chicharrón (Finely Ground Or Diced Seasoned Pork)

Loroco (Optional, Edible Flower Buds)

Grated Squash (Optional)

Other Optional Fillings: Chicken, Shrimp, Avocado, Or Jalapeño Peppers

Instructions

    In a bowl, mix masa harina, water, and salt to form a soft, pliable dough. Let rest briefly if needed.

    Divide the dough into small balls.

  3. 3

    Flatten each ball into a thick disc and place desired filling (cheese, beans, chicharrón, or other fillings) in the center.

    Carefully fold the dough around the filling to enclose it completely, then gently flatten into a thick tortilla.

    Heat a lightly greased griddle or skillet over medium heat.

  6. 6

    Cook each pupusa for several minutes per side until golden brown and cooked through.

    Serve warm, traditionally with curtido (pickled cabbage slaw) and tomato sauce, eaten by hand.
