Vegan Tofu Spring Rolls

Ingredients
Rice Paper Wrappers
Thin Rice Noodles, Cooked
Carrots, Thinly Sliced Or Julienned
Cucumbers, Cut Into Thin Strips
Red Cabbage, Thinly Sliced
Green Leaf Lettuce, Thinly Sliced
Fresh Mint Leaves
Fresh Cilantro
Smoked Or Flavored Ready-to-eat Tofu (Such As Sesame Ginger), Sliced
Peanut Dipping Sauce (Or Preferred Dipping Sauce)
Instructions

Prepare all vegetables, herbs, tofu, and cooked rice noodles before assembling.

Dip one rice paper wrapper into a shallow bowl of water for 30 seconds to 1 minute, until softened.

Lay the softened wrapper flat on a clean surface.

Arrange ingredients on the wrapper: start with a row of lettuce, then add tofu and cucumber.

Add fresh cilantro and mint, then sprinkle carrots and red cabbage on top.

Add a small pile of cooked rice noodles.

Fold the rice paper tightly to form a spring roll.

Repeat with remaining ingredients and serve with peanut dipping sauce.
